Microbiological Profile of Top Caps of Drinks Offered for Sale in Tin Free Still (TFS) Can

چکیده
Bu araştırmada marketlerde, büfelerde, kafelerde, vb. farklı zamanlarda satışa sunulan çeşitli içeceklerin üst kapaklarının mikrobiyal profilinin belirlenmesi amaçlanmıştır. amaçla Ekim- Haziran ayları arasında toplam 800 adet içecek numunesi alınmıştır. Örneklerin aerobik mezofilik bakteri (TAMB), maya küf (TMK), koliform grubu (TKGB) ve Staphylococcus aureus sayıları ile Escherichia coli, Salmnonella spp. Listeria monocytogenes türü varlıkları araştırılmıştır. En yüksek TAMB sayısı 5.22 log kob/cm2 soğuk çay içeceklerde, en TMK, TKBG sırasıyla 5.11 kob/cm2, 4.21 3.37 meyve aromalı içecekler grubunda olduğu tespit edilmiştir. Ayrıca 35 örnekte 21 Salmonella 18 de varlığı belirlenmiştir.
